Suggested menu for digital meeting because we could not meet due to Corona:
Appetizer: Prosciutto con melone
Very simple. Cut orange melon in slices and put some nice cured ham (preferably Italian Parma ham) on top and fresh ground black paper (optional – waiter will ask you).

Main: Oven baked cod with tomatoes and peas:
First dry a piece of fresh cod (any white fish will do) about 150-200 grams/person with kitchen tissue. Leave it on a plate literally covered in salt for 15-20 minutes. Then wash the salt off completely, dry it again and put the fish in an oven safe tray. Mix about ˝ dl of cream with ˝ ts of course mustard pr. person and a bit of black pepper and pour over the fish. Put the tray in the oven at approximately 160 degrees for about 15 minutes or until the fish flakes nicely.
Put a generous amount of Cherry tomatoes in another oven safe tray (approximately 15 pr. person) + 2 cloves of garlic finely chopped, sprinkle it with some olive oil and ˝ ts salt + pepper. Bake in the oven at approximately 160 degrees for about 20 minutes or until the tomato skin cracks lightly. It shall not be ketchup.
Heat some green peas and serve the Italian way as shown above.
Dessert: Pear a’la Pollestad
Slice a ripe pear in two and remove the center and replace it with a piece of blue cheese, mixed with a little cream to give it a softer, buttery consistency. Top it with a half walnut and voila, dessert done.

For this meal you may drink Corona or any other beer, but a fruity red (for example a Barbera d’Alba) or a fresh white (for instance a dry Riesling) will go nicely with the appetizer and the fish. The dessert, the rest of the bottle or a sweet sherry?

My Russian friend living in London reported this:
I have to admit I overestimated and there is plenty of fish left for two guests!
I have slightly played with the ingredients:
1. for the fish: I added a spoon of mayonnaise to thicken the sauce, and blanched shallots before covering the fish with them and then the sauce on top
2. for the tomatoes: I added pitted olives
3. sprinkled chives on the fish before serving
Most elegant and filling... now need a day to recover :)
